Low Fat Banana Cake

 
Go bananas for this moist and delicious cake!
And there is no need for butter or oil.
And the recipe even makes 2 yummy cakes.

EASY BANANA & COCONUT LOAF


4 ripe bananas
2 eggs, beaten
1 tsp vanilla essence
230gm SR Flour
85 gm brown sugar
1tsp baking powder
1/4 cup low fat greek yoghurt
1/4 cup shredded coconut

Mash bananas in a large bowl and then stir through beaten eggs and vanilla. Mix in dry ingredients and then stir in yoghurt.
Place into two greased/lined loaf pans.
Bake 35 - 40 minutes at 180c until golden and a skewer comes out clean.
Cool on a cake rack and then turn out.


Tips:
  • freeze peeled bananas past their best in a snap lock bag. They are perfect for cakes.
  • use a potato masher to mash the banana and to mix in the other ingredients
  • if using a silicon pan, grease lightly with butter
  • slice cooled cake and freeze, wrapped in glad wrap, or between layers of greaseproof paper, (if you are into wrap free lunches) and you can stop yourself from eating it all fresh from the oven!

 
  
Serve with the cuppa of your choice, and enjoy!
 
N.B I cooked one cake in a silicon pan and one in a metal pan. They turned out the same.
